Best Ever Chocolate Chip Cookies
One of my favourite childhood memories is coming home from school to the aroma of fresh out of the oven, homemade cookies. These cookies are literally the best cookies I've ever had, with the perfect amount of chocolate, and lots of brown sugar and butter for a yummy rich, caramel flavour, with an amazing chewy texture.
My mum has used the same recipe for years, and now, having moved out, I've gotten the recipe from mum so I can keep eating these cookies!

To make these cookies, you will need:
125g softened butter
1 cup brown sugar
1/4 cup caster sugar
1 egg
1 tsp vanilla essence
1 cup self raising flour
3/4 cups plain flour
1 tsp baking powder
1 cup chocolate chips
Preheat the oven to 160 degrees fan forced (180 degrees), and line a baking tray with baking paper.
Melt the butter in saucepan over low heat, and set aside to cool.
Pour the butter into a mixing bowl, and beat in all sugars.
Lightly beat the egg, and mix into the sugar mixture, along with the vanilla extract.
In another bowl, sift the flours and baking powder. Gradually add the flour mixture to the sugar mixture, being careful not to over stir.
Stir through your chocolate chips now, or you can push them in to your cookie dough balls later.
Using a table spoon measure, divide the mixture into tablespoon sizes, and roll into small balls, placing them on to the lined baking tray. Make sure to leave enough room on the try between your cookies so they don't melt together in the oven.
Place the tray in the oven, and bake for 12 minutes, or until golden brown.
Leave to cool on a baking tray for a few minutes before serving.
